Pascal Jolivet Sancerre

Situated 125 miles south of Paris, the Sancerre landscape undulates between 650 and 1,300 feet. The Loire River on the Eastern side of the hilly environment creates a relatively temperate microclimate for the wines. Pascal Jolivet Sancerre Blanc is sourced from three vineyards in the heart of the appellation. The Les Caillottes vineyard and its chalky soils make up 50% of the blend, followed by the hillside vineyard of Les Terres Blanches at 30% and the limestone and flint-riddled vineyard of Silex making up the remaining 20%.

Each grape is sorted upon harvest receipt; Pascal Jolivet works by gravity to respect the natural circuit of winemaking. Light press to maintain optimal fruitiness. Blend of 50% limestone, 30% clay-limestone and 20% flint. Each soil is vinified separately in thermo-regulated stainless steel vats; the limestone provides minerality and finesse; the clay-limestone brings fruit richness, and the flint brings structure and minerality. Unique, precise, chic, timeless and divinely good.

Pascal Jolivet Sancerre is pale and vibrant in color. The Pascal Jolivet Sancerre Blanc is fresh, clean, and screaming with racy acidity. The palate is fresh and tightly wound; acidity is tempered by very subtle residual sugar; it is very clean, alive, racy, and youthful. Overall, it is a dry and elegant wine that is ideal as an aperitif and accompanies oysters, sashimi, or white fish.
