Cavicchioli 1928 Prosecco is crafted by the renowned Cavicchioli winery, which has been producing high quality wines since 1928. The grapes for this Prosecco come from the Veneto region in Northern Italy, specifically from the province of Treviso. The wine is made exclusively from Glera grapes, known for their crisp acidity and fresh, fruity flavors. It has an 11% alcohol by volume (ABV).
The making process involves hand picking the grapes slightly under ripe to preserve their acidity. The grapes are then vinified in white with the skins at a low temperature (cryomaceration) for about 12 hours. This is followed by alcoholic fermentation at a controlled temperature of 16 to 18°C and a second fermentation using the Charmat method at 12 to 14°C for 15 to 24 days. The wine is then aged briefly before bottling to maintain its fresh and delicate characteristics.
Cavicchioli 1928 Prosecco pairs wonderfully with a variety of foods, making it a versatile choice for any occasion. Its fresh and fruity profile complements light appetizers, seafood dishes, and salads, while its effervescence makes it an excellent aperitif.
