Cook’s Spumante

Cook’s Spumante is crafted by Cook’s California Champagne, a winery located in Madera, California. The grapes used for this sparkling wine come from the same vineyards in California each year, ensuring consistent quality. Chardonnay, Pinot Noir, and Pinot Meunier are the primary grape varieties. First, the grapes are harvested and pressed to extract the juice. This juice undergoes primary fermentation, where yeast converts the sugars into alcohol and carbon dioxide. After blending, secondary fermentation is initiated by adding yeast and sugar, which creates the wine’s effervescence. Finally, a dosage of sugar is added to achieve the desired sweetness level.

Cook’s Spumante is aged 18 months before it is ready for bottling. This aging process allows the wine to develop its complex flavors and smooth finish, with an 8.5% alcohol by volume (ABV).
